560g baby octopus
1/4 cup red wine vinegar
oregano
garlic
chilli (deseeded and sliced)
olive oil
black pepper
100g baby spinach leaves

dressing 1 1/2 tablespoons redwine vinegar, olive oil and crushed garlic

marinate octopus in red win vinegar, and herbs and chilli in the fridge.

Chargrill the octupus at medium heat. continue brushing with marinade

toss the octopus and chilli with the baby spinach leaves and spoon over the dressing.

Serves four.

If I may...........

Thinly slice some slighty under-ripe peach, toss in a lightly oiled, very hot pan for 2-3 minutes. Add the hot peaches and some toasted pine-nuts to the salad.
