Okay, in my family we have a HARD time finding a dish that all of us would like. Tonight, my Mom left to go to the movies with friends leaving me to figure out dinner.

I did NOT want baked chicken again...so...I flipped through a couple of cookbooks...and then tossed them out :P

I found an IDEA but not a recipie. Anyway...what I found became a dish that my entire family loved and is easy to make and takes less than an hour.

-First, pull out smallish to medium size brown skinned potatoes out. Wash them really good...but do NOT skin.

-Then, slice them length-wise. I used 6 potatoes for 3 people, so when split you had 12 pieces. I sprayed them with this butter flavored no stick spray so that when they bake they'll soak in the butter flavor and have a more even browning.

Put them in the oven at 450 for about a half an hour or until the tops are slightly brown or the skin can be easily peeled back by a fork

-While the potatoes are baking, you pull out 3 pieces of boneless chicken <breast meat) and cook and dice them or about the equivalent of 2-3 cups of diced chicken...really, however much you want to put in the dish.

I used the microwave to cook the chicken b/c it was easier, just make sure all the pink is gone...that will take about 15 minutes, just make sure that the chicken is cooking evenly. If you bought already cooked and diced meat just heat it up.

-So, while the potatoes and chicken are cooking you can boil the brocolli. I cut the brocoli pieces up small.

-Once the chicken is done cooking in the microwave you make the white sauce for the dish. This will take about 10min.

White Sauce:

3 tablespoons butter or margarine
3 tabelspoons flour
1/2 teaspoon salt
1/8 teaspoon white pepper <black will work too)
1 cup of milk

Melt the butter first. Then stir in the flour, salt and pepper. Next, mix in the milk. Put the entire mixture into the microwave for 1 minute. Stir. Put in for another minute. And stir again. You may notice it is clumping, just stir until it unclumps. Put it in for a minute, and if it isn't thick enough put it in for another 30 seconds and it should be fine, just make sure it is well stirred.

If you are making the dish for 3 or more people, double the measurements.

You can add the cheese into the mix. Finally, just toss in the chicken and the brocoli into the mixture and spoon over the potatoes which should be done by then.

Seriously, this dish takes about 45min. and is DELICIOUS.
