What you need - I made this up based on a few different receipes and I think the word is that it is divine (serves four):
150 grams thinly sliced smoked salmon. Basically dice it. before you put it in
1/2 cup white wine (Semillion chardonnay)
4 cups vegetable stock
large spanish onion diced
2 roma tomatos diced
5 mushrooms sliced
50g baby spinached sliced
1 bunch asparagus
handful chopped fresh parsley
pepper to taste
olive oil and butter
2 cups arborio rice
water as necessary
basically, brown the diced onion in olive oil and 2 tsp butter.
Add 2 cups arborio rice, wine and 1 cup of liquid vegetable stock. stir while simmering. As the rice absorbs the stock add the diced tomatoes.
Add another cup stock along with smoked salmon. keep stirring all the while
Add another cup stock with mushrooms, engilsh spinach and some pepper.
Once 3rd cup stock absorbed, add asparagus and parsley to with fourth cup stock.
then add rest of stock.... Stir for a while - once hte stock is absorbed add water if rice is not soft enough and keep stirring, simmer on low heat.
Serve with parmesan to taste (but it doesn't even need it).

Thats ok... trust me, if you replaced the salmon with bacon you'd probably find it would be just as great.
